It's incredible how some foods carry so much meaning with a mystical power that can bring back an onslaught of vivid, active memories. I am unable to enjoy banana bread with thinking of these childhood moments, and I am perfectly content with that! I'll have a second slice too, thanks.
1 cup all-purpose flour
1 cup oatmeal flour
1/2 cup whole oats
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/4 cup plain yogurt
1/4 cup orange juice
1/2 cup honey
1 egg
3 overripe bananas, mashed
Rind of 1/2 orange, chopped
Directions
1. Preheat oven to 350F. Grease a 9x5-inch loaf pan and dust lightly with flour.
2. Combine flours, spices, baking soda and powder, and salt in a large bowl.
3. Create a well in the middle of your flour mixture and pour your yogurt, egg and honey in. Fold til just combined.
4. Stir in mashed bananas until well incorporated.
5. Transfer batter into prepared loaf pan.
6. Bake in preheated oven until a toothpick inserted into center of loaf comes out clean, 50 to 55 minutes.
7. Let bread cool in pan for 10 minutes before removing from pan and slicing. Enjoy!
