1 cup nonfat Greek style yogurt
1 tsp olive oil
2 tsp fresh lemon juice
1 clove garlic, minced
2 tsp chopped fresh dill leaves
1 tsp chopped parsley and chopped basil
1 tsp black pepper
1/8 teaspoon salt
1. Grate cucumber and reserve its juice.
2. Combine all ingredients and allow flavors to meld together in refrigerator for a minimum of 2 hours or overnight.
