I enjoy tzatziki on just about everything in the summer time! Tzatziki tastes great on burgers (like my Greek Burgers) and in wraps. You can use it as a dip for homemade pita chips and veggies. It is refreshing and light and packed full of flavor. Best of all, it is easy to make and will keep in your refrigerator for up to a week! So good.
Ingredients 1 cup nonfat Greek style yogurt 1 tsp olive oil 2 tsp fresh lemon juice 1 clove garlic, minced 2 tsp chopped fresh dill leaves 1 tsp chopped parsley and chopped basil 1/2 cucumber 1 tsp black pepper 1/8 teaspoon salt | Directions 1. Grate cucumber and reserve its juice. 2. Combine all ingredients and allow flavors to meld together in refrigerator for a minimum of 2 hours or overnight. |
